Coconut soup with Prawns
This is the recipe of an incredible soup, perfect for the summer season and dinner party's.
This recipe is: for 4 persons
what do you need?
- 12 prawns
- 400 ml coconutmilk
- 600ml vegetablebroth
- 1 stick of vanilla
- 1 tablespoon of green curry paste
- 150g snow peas
- 100g small corn flasks
- 1 red chilipepper
- peper and salt
- fresh coreander
The recipe:
1: Peal the scampi's, but leave the tail, cut with a sharp knife the backside of the prawn and remove the intestinal tract.
2: Slice the stick of vanilla open in half and remove the pulp
3: Heat the coconutmilk with the broth, add the vanilla pulp and the currypaste, stir well.
4:Wash the snow peas and cut them in thin slices, cut the corn in half(lenghtwise), and let the vegetables cook for 2 minutes in the coconutbroth.
5: Open the chilipeper and remove all the seeds, (if you like it very spicy, then leave them in).cut the pepper in small peaces and add them to the soup.
6: Add the scampi's and let them be around 4 minutes to be cooked, check the flavor and if needed add some peper and/or salt.
7: spread the soup in heated bowls or plates, and finish with a coriander leaf
extra tip:
Add some extra prawns and a bowl of rice and you have a main course.
Rather more vegetables? add some thin slices of red paprika and some soybean sprouts.
I have made this soup several times at home and this one is always a huge succes.
